Breakfast Oatmeal Flax Cookies

oatmeal flax cookiesTry these oatmeal flax cookies that contain no flour and no sugar for breakfast or for healthy snacking. Easy to make and tasty to no end! They are crunchy on the outside and moist on the inside and they go great with coffee.

For approx 2 dozen you will need (can half recipe if you want):


4 1/2 cups rolled oats
1 1/2 cups ground flax
1 cup raisins
1/2 cup dried cranberries
1 1/2 tsp baking soda
1 1/2 salt
3/4 cup room temp butter
1 1/2 cups granulated sucralose
3 eggs
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1 1/2 tsp ground anise
1 1/2 tsp ground fennel seed
1 1/2 tsp vanilla and/or 1 1/2 tsp flavoured liquor (Fireball, orange/liquorice liquor etc)
– if wanted for extra sweetness you can add 1/2 cup sweetened shredded coconut

In a large bowl combine the oats, flax, raisins, cranberries, baking soda, salt and spices then set aside.

In a mixer combine the butter plus granulated sucralose and blend till creamy. Add eggs and vanilla (plus liquor if using) and run till combined. Then add your dry mixture in three equal parts and mix till combined. Drop approx 1 1/2 tablespoon size for each cookie onto a non-stick cookie sheet and then bake at 350℃ for between 13 and 16 minutes. You can place the cookies fairly close together as they will not spread very much when baking. Let cool and enjoy!

You can substitute flour (white or whole wheat) for the flax and you can also use sugar instead of the sucralose.
